Sr. Assistant Kitchen Manager

Chicken N Pickle is a dynamic, multi-purpose entertainment venue that delivers a premium experience by providing high-quality service and food in a fun, fast-paced environment. We seek a Sr. AKM to support a high volume multifaceted Back of House Operations. The Sr. AKM supports the EKM and the BOH management team to lead and guide the execution of high-quality food while motivating and developing teammates to provide a premium guest experience.

The Sr. AKM responsibilities include developing AKMs, and hourly team members. The candidate leads the kitchen team to understand and utilize all CNP culinary tools that guide the teams to deliver a high level of sanitation, organization, and recipe-right entrees.

The Sr. AKM leads efficient BOH operations and maintains production goals, productivity, efficiency, quality, and customer-service standards.

Sr. Assistant Kitchen Manager Responsibilities:

Sr. Assistant Kitchen Manager Qualifications

ESSENTIAL FUNCTIONS:

  • Deliver internal and external guest service the Nemacolin Way. Goes above and beyond – whether for an associate or guest.

KNOWLEDGE, SKILLS, AND ABILITIES REQUIRED:

  • Bachelors’ degree in hospitality management and/or relatable restaurant leadership experience.
  • Minimum of 5 years’ experience in the hospitality industry – with the most recent experience overseeing F&B multi-outlet operations in a high-volume, high-end luxury resort preferred.

The Senior Manager of Event Services will assist the Director of Event Services with overseeing the Events, Box Office and Group Sales Departments. This individual will manage many aspects of front of house operations in the facility from the advance planning stages through the end of the event; this position will recruit, train, motivate, and evaluate all front of house staff including box office, ticket sales, group sales, building security, guest services, parking and medical staff. The Senior Manager of Event Services will also coordinate police presence and local public safety officials to ensure events run smoothly; coordinate communication between event related staff and delegate assignments and be responsible for overall customer and lessee satisfaction.

 

This role will pay a salary of $60,000 to $80,000.

The Restaurant General Manager works in support of the resort operations team in leading the efforts of the Game Changer recreational facility. The Restaurant General Manager is focused on driving financial results, guest satisfaction and associate fulfillment. In this endeavor, they are responsible for ensuring continued and profitable sales growth and excellent customer service in the assigned operations through effective management of the team and all available resources and in compliance with company policies and standards, local, state and federal.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following.

 

TEAM

  • Cultivates a strategic team environment that provides exceptional customer service while directing the management team and ensuring all staff members perform at a consistently high level.
  • Assures staffing levels and management coverage is appropriate to meet the needs of the business and maximize the customer experience.
  • Promotes positive employee relations including effective delegation of managerial duties, fostering high staff morale, upholding operation standards, and execution of the performance management process.
  • Ensure service staff review and successfully complete alcohol awareness certification program as required by state and provide responsible service of alcoholic beverages.

  • Oversee the daily operations of outlet for efficient operations.

  • Act as point of contact for all resort group sales and catering leads and work directly with clients for events generated by resort sale and catering teams.
  • Hire, train and develop leadership team for operation.
  • Ensure team member scheduling is at proper staffing levels; watch labor cost daily to ensure effective scheduling.
  • Manage point of sale processes including maintenance of the master item list, pricing parity across each revenue center, screen menus, pricing, key assignments, reports and analysis.
  • Process daily sales reports and other reports as requested to compare against daily audits.
  • Inspect food and beverage operation daily to ensure high quality food and food presentation, cleanliness and side work duties completed.
  • Maintain physical plant by completing equipment checklist and work order procedures and conducting weekly inspections. Complete work orders for any equipment in need of repair or replacement.
  • Participate in monthly inventories.
  • Initiate programs to reduce breakage and loss in China, Glass and Silver.
  • Address customer queries courteously and ensure customer satisfaction.
  • Consistently meet the standard for the guest experience (Unifocus).
  • Maintain a safe and secure environment for all guests and staff.
  • Continuously improves operational execution through attention to detail and adherence to Pyramid Global Hospitality operating standards and philosophies.

 

FINANCIAL

  • Create annual budget and business plan to meet targeted financial performance.
  • Set forecasting goals by period and hold managers accountable for setting and meeting departmental goals.
  • Develop short-term financial and operational plans for the Experience Center, which support the overall objectives of the Experience Center and of the Resort.
  • Maximize food and beverage sales by identifying and targeting sales opportunities through marketing including promotions and special events and by training staff on up-selling.
  • Maintain systems which insure overall fiscal responsibility for inventory, etc.

 

COMMUNICATION

  • Maintain open lines of communication with all employees and departments. Conduct daily pre-shift meetings to inform staff of events; reviews daily specials.
  • Attend meetings/training as required by management.
  • Prepare and submit all required reports and assignments in a timely manner.

 

COMPLIANCE

  • Ensure adherence to all local liquor laws and sanitation/safety regulations.
  • Ensure adherence to all state food safety requirements including purchasing, receiving, storage, preparation and service of food and non-alcoholic beverages.
  • Hold certification as Food Safety Manager.

What are we looking for?

What we offer

Reporting to the General Manager and supporting the Center Management Team, this is a full‐time role responsible for all center‐level administration, including but not limited to service contract and vendor administration, finance administration, and tenant administration and coordination. Coordination and execution of the on‐site Specialty Leasing and Brand Ventures program, and providing all customers including guests, retail partners, contractors, and internal cross‐functional teams with an exceptional service experience, while always maintaining compliance with company policies and procedures.

Scope

Contracts Administration (Service Contracts, Work Orders & General Expenditure)

  • Maintains the Center Contract Log: logs new contracts, amendments and follows up with Facility Operations on expirations that require a new contract or renewal.
  • Works in partnership with Facility Operations, drafts work orders and service contracts, checks and updates forecast expenditure balance.
  • Monitors and manages compliance of center teams with the Contract Policy and Finance Authorization Matrix.
  • Through Procore, supports the bidding process:
  • Performs Know Your Partner/GAN Compliance checks.
  • Notifies vendors of recommendations.
  • Collects vendors’ Certificates of Insurance.
  • Drafts contracts and issues to vendors for execution.

  • Obtains sales from Tenants in accordance with lease terms, follows‐up on any outstanding data to full completion and uploads data into Salesforce.
  • Verifies Tenant billing on the monthly Rent Roll and issues to the General Manager for approval.
  • Calculates percentage rent billing from sales data and creates/processes/sends manual bill.
  • Month End/Quarter‐End/Year‐End Processes:
  • Prepares a list of accruals and collates back‐up documentation. Verifies accruals in system and assists the General Manager with the forecast.
  • Reconciles P‐card expenses, uploads receipts, and verifies payment.
  • Centers with central Plant – prepares Central Plant Union (Engineers) payments:
  • Calculates Union Dues/Annuity/Pension, creates invoice for overtime and bill‐back.
  • Creates a check request for Dues/Annuity/Pension and submits into Nexus, routes to Accounts Payable.

Specialty Leasing & Brand Ventures Coordination of Center‐level Program

  • Supports Specialty Leasing and Brand Ventures operations. Responsible for center‐level coordination and management of ALL temporary in‐line and common area mall activations, including Retail Merchandizing Units (RMUs), pop‐up in‐line stores, and kiosks.
  • Performs center walks/inspections, ensures Tenant activation complies with visual merchandising Design Guidelines.
  • Monitors pipeline activity, distributing reports to center team, and plans the activation schedule.
  • Arranges regular communications with center teams to align on activity (General Manager/Asst. General Manager/ Facility Operations.
  • Arranges regular communications with the Specialty Leasing team to plan the schedule, align on Tenant requirements and troubleshoot issues.
  • With support from Marketing, liaises with Tenants on retail and center operations, sales, and customer service, optimizing performance and income.
  • Obtains permits from the local authority, where required, and supports Tenants with the same.
  • Obtains Tenant Certificates of Insurance and uploads to Salesforce.
  • Obtains Tenant signage proposals and internal approval from Retail Design Management, ensures the Tenant implements according to the approved specification.
  • Coordinates the roll‐on roll‐off of units, issues instructions to Facility Operations and follows through to completion.
  • Issues meter readings and utilities supplier information to Tenants (in‐line stores and kiosks only).
  • Inventory management in partnership with Facility Operations:
  • Communicates maintenance and repairs. Creates associated purchase orders/invoices and forecasts for expenditures.
  • Checks Exiting Condition Reports are completed for all vacant, outgoing in‐line units and kiosks.
  • Maintains an equipment and asset inventory schedule.
  • Takes photos of activations, media, and space opportunities and uploads them to Salesforce as required.

General Coordination & Duties

  • Sales Collection:
  • Obtains sales from ALL permanent and temporary retailers in accordance with lease terms and uploads data into sales tracking system.
  • Completes Sales Report sign‐off and issues to the General Manager for approval.
  • Processes Open/Closed/What’s Happening Notices in accordance to policy.
  • Uploads executed storage leases in the system.
  • Processes mail – receives, opens, scans and mails: Certificates of Insurance, manual checks (mails to the lockbox), invoices, other general information.
  • Prepares Tenant Operational Defaults for breach of lease covenants, issues to the General Manager for signature and distributes to the Tenant.
  • Coordinates URW Connect:
  • Uploads URW communications from Management Team to Tenants.
  • Responds to Tenant requests and communicates these to relevant team members for follow‐up.
  • Processes Tenant requests for works and approves after hours work permits (checks insurance, reviews work in conjunction with Facility Operations).
  • Attends weekly staff meeting and customer service (“Style” program) sessions.
  • Attends required training classes and programs.
  • Other duties, as assigned.

What we are looking for

  • BA or BS degree or equivalent experience required.
  • 2‐3 years’ prior experience in an administration role, working with cross‐functional teams.
  • Experience of basic finance administration: processing purchase orders/invoices, assisting with accruals and budget forecasting.
  • Proficient in current Microsoft Office software including Outlook, Word, Excel, PowerPoint, and SharePoint. Working knowledge of enterprise management systems (Salesforce) and project management software (Procore) is advantageous.
  • Ability to understand and interpret legal agreements.
  • Ability to conform to policies and procedures and familiarity of working within a compliance framework.
  • Ability to respect confidentiality and sensitivity of information.
  • Exceptional process management skills: can organize and prioritize an efficient workflow, simplify complex processes, anticipate, and adjust for problems and roadblocks, adapt to changing priorities, and manage from start to finish.
  • Exceptional customer service skills and the ability to develop and maintain effective relationships; dedicated to meeting the expectations and requirements of internal and external customers, specifically through listening and responding to concerns both in the moment and via digital communication means.

The Event Manager will manage every aspect of their assigned events from the advance planning stages through the end of the event; as needed hire, train, schedule and supervise all event staff, as well as oversee building security and parking services; interact with all departments and vendors as well as local public safety officials to ensure events run smoothly; coordinate communication between event staff and delegate assignments; insure timely and accurate coordination of event financials with finance department; be responsible for and ensure overall customer and lessee satisfaction and experience.

 

This role will pay a salary of $55,000 to $70,000.

  • Plan, service and supervise large events.
  • Plan, direct and evaluate the work of subordinates.
  • Provide leadership for event personnel.
  • Analyze challenges, identify alternative solutions, and project consequences of proposed actions and implement recommendations in support of organizational objectives.
  • Establish and maintain effective working relationships with staff, contractors, and facility users.

  • Create work schedules for events, parking and security staff, delegate assignments and review performance and results.
  • Function as a liaison between users of the facility and the facility staff.
  • Recommend and evaluate required event staffing levels.
  • Coordinate communication between building staff and show staff during load in and load out.
  • Establish and maintain effective working relationships with lessees, employees, municipal officials, service contractors and patrons/public.
  • Investigate and resolve event-related complaints in a professional manner ensuring customer satisfaction.
  • Order and maintain equipment (radios, headsets, etc.) for all event, parking and security staff.
  • Ensure that the facility is cleaned prior to, during and after all events to maintain building’s appearance and increase customer satisfaction.
  • Inform/train all staff on customer service program, ensuring proper and constant execution.
  • Make hospitality arrangements as needed.
  • Communicate with municipal officials, including police, fire and medical services, event staff and public to ensure security of patrons and events run smoothly.
  • Review emergency planning procedures with all events staff for each event
  • Create and distribute detailed data sheets prior to every event.
  • As needed assist and direct changeover crew with breakdown and setup of events
  • Coordinate with Finance/Payroll as needed to ensure event staff and other applicable parties are paid.
  • Coordinate services needs with Food and Beverage department as needed.
  • Serve as Manager on duty as scheduled.

 

  • Three to five (3-5+) years’ experience of increasing responsibility in event management, preferably with background in convention center, sports facility, performing arts facility, or other multi-purpose assembly facility.
  • Graduate of an accredited four (4) year college with degree emphasis in management or industry-related field (i.e. entertainment, sports, meeting planning, recreation, and business) preferred.
  • Three (3+) years’ experience managing/leading people and teams.
  • Possess a high level of both external and internal customer service and advanced interpersonal skills.
  • Ability to function effectively and make management decisions in a face-paced, constantly changing high pressure environment.
  • Detail oriented and organized with effective time management skills.
  • Ability to work flexible and sometimes demanding schedules including: nights, weekends, and holidays.
  • Ability to perform duties of this position indoors and occasionally outdoors in the weather conditions prevalent at the time.
