Job Summary
The Director of Concessions will lead the team who creates unforgettable experiences. As Director of Concessions, you will be responsible for managing the concessions department to achieve the best possible guest experience, partner satisfaction and financial results. The ideal candidate will be an experienced operations leader who is focused on people and quality standards.
Detailed Responsibilities
- Overseeing all aspects of concessions operations
- Ensuring the recruitment and training of team members in our standards and procedures
- Working with the location leadership team to continually drive improvements in guest satisfaction and financial results
- Driving engagement within the concessions department
- Overseeing all aspects of season planning and event preparation in the concessions department to ensure maximum event readiness
- Ensuring point of sale updates and regular maintenance checks are completed
- Completing calorific analysis of menu items in partnership with the culinary team
- Ensuring the timely implementation and communication of promotions
- Overseeing loss prevention activities including managing cash drops/collection, completing cash variance logs, and overseeing the nightly Goods Out of Stock (GOS) procedure
- Working in partnership with other departments to ensure accurate completion of the requisition process
- Working with the culinary and purchasing team to ensure regular updates to the concessions theoretical matrix to ensure accurate theoretical margin calculations
- Ensuring compliance with all Payment Card Information rules
- Implementing concessions Production Sheet to ensure accurate production and minimal wastage
- Conducting progressive coaching with team members
- Completion of monthly financial reporting and action planning
- Ensuring regular maintenance, cleaning and inspection of all concessions areas and equipment
- Ensuring all appropriate alcohol service signage is placed and that Responsible Service of Alcohol protocols are followed
- Completion and processing of alcohol incident logs to identify recurring issues or trends
- Managing team member meal breaks
- Overseeing recruitment activities for team members and non-profit groups
- Holding pre-shift meetings to set the tone for events
- Support location “Keys to the Future” activities to develop future leaders
- Support team member orientation training
- Lead NPO Group management and communication
- Oversee service standards during events to ensure a high level of the guest experience
- Ensuring accurate end of month inventory completion
- Partnering with purchasing team to manage product transfers and requisition sheets to accurately track products during events
- Managing and resolving guest complaints
- Managing team member incidents/accidents and following all required reporting procedures
- Managing the onboarding of new management employees in line with our #bestdayever process
- Conduct monthly safety training for team members
- Managing team member scheduling in line with demand forecasts
- Verifying payroll, entering gratuities
- Subcontractor communications – ensure they have all correct paperwork in, scheduled properly, staffing has done appropriate trainings, etc.
- Responsible for the accurate and timely completion of month-end inventory for the concessions department
- Completing building walkthroughs during events
- Working with location partners to manage the implementation standards agreed through sponsorship deals
- Supporting other locations/properties, as needed
Skills and Experience
- 5+ years of experience in a food and beverage operational position
- Bachelor’s degree in hospitality management is preferred
- High level of computer literacy
- Passion for hospitality, food, and retail
- Excellent interpersonal and stakeholder management skills
- Able to work evenings and weekends, as dictated by event schedule

PAWS Chicago is seeking a Director of People & Culture who will forge strong relationships with managers and employees, providing advice on people matters. The person in this role assesses and anticipates people related needs and formulates partnerships to deliver value-added service to management and employees that reflects the mission, values, and objectives of PAWS. Key Duties and Responsibilities
Employee Relations & Culture
- Be a strategic thought partner for the team to maximize employee engagement to achieve exceptional operational performance.
- Contribute to employee development and engagement initiatives in support of, and in partnership with, the organization, i.e. training programs, culture events, roundtable discussions, engagement surveys, etc.
- Conduct investigations of employee relations issues in alignment with PAWS Chicago’s standard, values and leadership principles.
- Support DEI initiatives as it relates to the mission, values and culture.
Leadership
- Provide coaching and guidance to our Medical Center leaders using PAWS Chicago’s vision and values to help them effectively apply our people practices, particularly around performance feedback, employee relations, and development discussions.
- Collaborate with employees at the Medical Center who are seeking guidance or support related to our practices and systems.
- Maintain a positive and inspirational environment for staff and volunteers, keeping all people focused on the life-saving goals of PAWS Chicago.
- Partner with the People & Culture team to create and implement process improvements and other special projects as they arise.
- Identify ways to innovate and evolve the industry forward, with a continuous improvement mindset. Assist in facilitating the development of new aspects of the People & Culture program to keep PAWS Chicago on the cutting edge
Talent Acquisition/Management
- Partner with hiring managers to coordinate interview scheduling for phone and onsite candidates.
- Work with leaders to effectively onboard new hires to set them up for success in their career with PAWS Chicago. This may include facilitating new hire trainings, setting them up in our HR Systems, answering onboarding questions, etc.
- Cohort for managing, tracking, and communicating with candidates throughout the recruitment experience.
- Support the People & Culture team on change management, communications and participate in training to educate leaders, managers, and employees on performance management processes.
Benefits, Compensation, Risk Management
- Consult with the Head of People & Culture on compensation and benefit related items; coach management on salary increase recommendations and new hires, promotions, and other staffing changes.
- Administer leave of absence programs by advising and supporting employee throughout the LOA process.
- Ensure worker’s compensation claims are administered in an effective and compliant manner, including incident investigations, data analysis and recurrence prevention program and procedures.
Systems & Compliance
- Manage the process, data collection, and reporting for the various tools and systems we use on a daily basis, i.e. Paycom, OneAmerica
- Process HRIS transactions including organizational changes, separations, and LOA’s.
- Ensure the Medical Center is up to date on all federal, state and contractual requirements.
Requirements
- Passion for animals and animal welfare
- A bachelor’s degree and 5+ years of Human Resources experience with progressive career development
- Professional in Human Resources (PHR) certification preferred
- Knowledge and commitment to PAWS Chicago’s No Kill model
- Individual must be proficient in MS Office
