PRIMARY PURPOSE:

The General Manager is responsible for all aspects of the management of the restaurant. They provide direction and leadership for the Assistant General Managers, and the Restaurant Service team consistent with the MGM brand. They are responsible for leading the team to achieve the operational and financial goals of the venue; driving covers and optimizing reservation channels; monitoring the performance, scheduling and training of the staff; executing initiatives as implemented by property F&B leadership; maintaining the facilities in accordance with MGM Resorts service standards; and ensuring high customer satisfaction and an exceptional guest experience.

THE DAY-TO-DAY:

  • Owns, leads and oversees daily restaurant operations, fiscal budgets, labor productivity, scheduling, inventory control, guest service standards, and execution and development of marketing strategies to produce both short-term and long-term profitability. Co-own (with Executive Chef) the restaurant’s business plan and represent the restaurant in divisional, property or corporate meetings.
  • Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, menus, rules and regulations for the restaurant staff. Owns restaurant’s execution of F&B and/or company-wide initiatives and programs. Maintain the highest standards of health, sanitation and cleanliness with in all areas of Beverage. Responsible for completion of all company compliance training by the restaurant staff.
  • Manages Human Resources responsibilities for Restaurant to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company’s diversity commitment; adherence to the company’s status quo third party representation philosophy; compliance with company policies, legal requirements, employment law, and collective bargaining agreements.
  • Interacts with guests frequently to ensure satisfaction and enjoyment of dining experience. Reacts to any guest complaints and takes any appropriate action. Manages Restaurant’s guest feedback channels through approved company practices. Collaborate with Executive Chef and culinary team to ensure a seamless service experience between kitchen and dining room.
  • Maintains excellent knowledge of venue’s food & beverage products, menu items and equipment used to perform duties.

A GREAT CANDIDATE WILL HAVE:

  • Bachelor’s degree in a related field, or equivalent experience.
  • Two (2) or more years of prior relevant experience.
  • Previous experience working in a high-volume restaurant or previous experience in a luxury or fine-dining restaurant.
  • Previous experience managing employees under a collective bargaining agreement.
  • Bilingual, English as the primary or secondary language.

As a Senior Assistant Executive Steward, you will be responsible for assigned operational functions within the department. You will also have developed managerial skills, knowledge of all kitchen steward functions and materials and equipment used in the kitchen. Your ability to lead and manage a team will be a valuable asset.

THE DAY-TO-DAY:

  • Manages the operations in the stewarding department to ensure departmental strategic goals and intent are being met and exceeding expectations.
  • Manage Human Resources responsibilities to include: creating a work environment that promotes teamwork, performance feedback, recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning processes that encompass the company’s diversity commitment; compliance with company and department policies, and legal requirements.
  • Assist in handling all stewarding related labor relations issues. Assists in the investigation of such issues. Provide recommendations and issues appropriate counseling, suspensions, and terminations.
  • Oversee on the job training & development programs through stewarding managers on a regular basis.
  • Implement of F&B policies, operating procedures and training programs, manuals, directives, work schedules, rules and regulations for the stewarding staff and personnel.
  • Coordinate purchase needs and parts to properly operate Food & Beverage outlet needs and fill outlet requisitions.
  • Ensure all employees are properly trained in the Stewarding policies and procedures and use of all equipment.
  • Act as a liaison with contract companies.
  • Coordinate and communicate with all outside vendors and services, and Health Department.
  • Responsible for walk-through inspections of kitchen areas.

A GREAT CANDIDATE WILL HAVE:

  • Bachelor’s degree in a related field, or equivalent experience
  • Two (2) years of experience in Stewarding within the hotel/casino industry
  • Work varied shifts, to include weekends and holidays
  • Experience working in a leadership or supervisory role
  • Experience working in a similar resort setting
  • Experience managing employees using a Collective Bargaining Agreement

PRIMARY PURPOSE:

It is the responsibility of the Technology Sourcing Manager – to manage sourcing activities and projects for assigned categories as determined by Technology Sourcing leadership. Technology Sourcing categories include sourcing and contract activities for technology products and services in the following verticals: retail, gaming, general technology products, desktop, telecom, network, security/surveillance, consulting, staff augmentation, hotel, food & beverage, information security, human resources, global procurement, digital marketing, revenue management, entertainment, financial/analytics, media technology, and marketing for MGM Resorts International and subsidiary companies. All duties are to be performed in accordance with departmental and MGM Resorts International policies, practices and procedures.

  • Manage or support technology sourcing efforts for assigned technology related products and services required by the company’s technology departments, business departments, Centers of Excellence (COE’s), and MGM Resorts International’s various properties
  • Develop and issue comprehensive, consolidated, global Requests for Proposal (RFP’s), Request for Quotes (RFQ’s), Request for Information (RFI’s) and conduct RFx analysis to assist in determining award scenarios by collaborating with internal business teams, technology departments, and COE’s as required
  • Ensure Non-Disclosure Agreements (NDA’s) are executed as needed
  • Ensure probity reviews are conducted as necessary
  • Work with IT compliance to ensure suppliers are compliant with gaming jurisdictions if required
  • Lead, prepare and execute supplier negotiations; negotiate and write performance driven supplier contracts for assigned projects; Expert knowledge of business terms, legal terms, pricing terms, ability to redline/blackline contractual agreements (which includes, but not limited to: lease agreements, product and services agreements, amendments, addendums, SOW’s, change orders, order forms, letters of termination, contractual documentation related to supplier disengagement process, contract renewals, and maintenance agreements) and work with suppliers, internal business teams, COE’s, technology departments, Corporate Legal, Security and Risk to accomplish these tasks
  • Collaborate with cross-functional internal teams to determine business success factors, expectations, and requirements to ensure appropriate statements of work are being developed by internal teams and include supplier performance metrics to ensure that such statements of work (“SOW”) are performance driven to hold the supplier accountable during the performance of their obligations
  • Conduct financial and spend analysis with the ability to quickly identify trends and discrepancies as needed
  • Collaborate with internal business departments, technology departments, and COE’s to identify company-wide cost reduction opportunities, using techniques such as Total Cost of Ownership, supplier rationalization, demand management, make/buy and lease/buy analysis, where appropriate
  • Obtain business, legal, and risk signoff on all contractual documents and process documents to obtain authorized signatures from internal contracting entity and supplier; Ensure all executed contractual documents (i.e. Non-Disclosure Agreements, Statements of Work, Master Agreements, etc) are shared with appropriate parties and uploaded in the contract repository
  • Collaborate with internal business teams, COE’s and technology departments to identify new suppliers as required • Provide solutions to identified issues
  • Identify opportunities and make recommendations on strategic initiatives to management
  • Develop technology supplier relationships and identify qualified diverse suppliers for bidding opportunities.

MINIMUM REQUIREMENTS:

  • Bachelor’s degree in business or related field; or equivalent experience
  • Five (5) years of strategic sourcing experience with a focus on Technology sourcing
